These easy-to-make power bites are the perfect pre-gym snack or pick-me-up during the day when you need that extra boost of energy or sweet fix. They are naturally sweet and packed with nutrients, thanks to the oats, flaxseed meal, and your choice of dried fruit. For an extra protein boost, try adding hemp seeds, chia seeds, or nuts to the mix. Be creative and have fun with this base recipe!

Ingredients:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup organic ground flaxseed
  • 1/2 cup raisins, blueberries, or cranberries (or a combination)
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup dairy-free chocolate chips (100% cacao)
  • 1/2 cup pure honey
  • 1/3 cup peanut butter

Instructions:

  1. In a large mixing bowl, combine the oats, flaxseed meal, and dried fruit until well blended.
  2. Add the honey and peanut butter, and mix again until all ingredients are evenly combined and you have a consistent batter.
  3. Fill a small container with water, and use it to moisten your fingers as you shape the mixture into individual balls. Place the balls on a cookie sheet lined with wax paper or foil. You can make the bites as big or small as you like – a typical batch will yield 35-50 bites, depending on size.
  4. Once the cookie sheet is filled, place the bites in the freezer for at least 30 minutes to set.
  5. Enjoy your energy bites as a pre-gym snack or anytime you need a boost!
